I need ideas for freezer dinners.
So, my CNA course, that I was so excited about had been postponed and won't be starting until next week. I am still SO excited about it and am trying to get things ready for it. I have most of the babysitting arranged but still have a lot left to figure out. My biggest thing left now is dinners. I am going to be in class until 3:00 or 3:30 and I know myself well enough to know I will be tired. I will also get to come home and do my transcription so I am not going to want to exert much energy elsewhere. So, knowing that, my plan is to prepare some freezer dinners this weekend and have them ready to go for my class. My only problem is, I only have two dinners that I freeze on a regular basis and I need more ideas. I already do lasagna and enchiladas. I can also do white lasagna and white enchiladas but I want more variety. I have a recipe to do messy chicken or Italian cream cheese chicken (whatever you want to call it) and for chicken scampi but I still need more!! It would be nice to have at least 10 meals in my freezers (two per week of my class) but I don't know what else to put in there. Has anyone made bread dough then frozen it themselves?
So if you have any ideas, PLEASE share them!!! Tell your friends to share their ideas too!! Maybe if I get enough dinner ideas I can have make some time to put pictures of my kids up (yes, I am resorting to a form of bribery)!!!!!!!!!!

Best Taco Soup Ever!
1 Box Pacific Natural Foods Organic Soup, Roasted Red Pepper and Tomato
(You can get it at Winco)
1 can black beans
1 bag of corn
1 can kidney beans
1 can cut olives
1 can diced or stewed tomatoes
1-2 cups shredded cooked chicken
Whatever else you think would be good in the soup.
Throw it all together in a big pot and heat up, or throw together in a freezer bowl and stick in the freezer until you want it. Serve with sour cream and cheese on top.
